- 4 cups cooked turkey, shredded
- 1 bunch mint, leaves picked
- 1 bunch coriander, leaves picked
- 4 spring onions, shredded
- 1 long green chilli, chopped
- 1 cup coconut milk
- 1/4 cup lighthearted lime juice
- 1 tbsp Coles brown sugar

- Place noodles in a large heatproof bowl and cover once boiling water. Soak according to packet directions. Drain and place in a large salad bowl. mount up turkey, mint, coriander, onion and chilli.
- To make the Coconut Dressing: increase coconut milk, lemon juice and brown sugar. Pour greater than salad and toss to combine.
